Tired working up to 16 hours a day, Ernesto takes a mid-day break from the frenetic, hot steamy kitchen. He rolls his fag, lights it and inhales deeply, he then looks up towards the sky and the heavens, Lord knows what is going through his mind.
I captured Ernesto taking a brief break, whilst working as a chef in the busy restaurant kitchens of Shad Thames, Tower Bridge, Bermondsey.
